Founded by husband-wife duo Clint and Kim Cooper, Village Baking Company was birthed from their many years pursuing the baking craft. The couple first started baking from their home in 2004, before receiving professional training in Old World baking techniques in San Francisco and France. In 2012, they opened their first storefront in Dallas, with a menu full of classic viennoiserie items and artisanal rustic sourdough loaves (which are sold in farmers’ markets in the area), all made with high-quality Texas wheat.

Bacon Croissant: bacon with cheddar—essentially a ham & cheese croissant! Kinda underwhelmed by it, I didn’t like the bacon-to-croissant ratio (not enough bacon/too much bread), which made the whole thing kinda lack flavor. It was also slightly cavernous, and dry. (rating: 6/10)


Almond Croissant: they make it single baked here (so frangipane added into the raw dough then baked); but it didn’t seem like a lot of frangipane was added… as you can see in the cross section. So a lot of the “almond” flavor came from the topping for me. (rating: 3.5/10)
