Zeit für Brot is the boulangerie country club of the town: only the classiest (doesn’t contain chemical additives or artificial enzymes) loaves, rolls, quick breads, and cake bars are allowed membership, and they are only admitted by invitation. You won’t find a croissant or an entremet strolling around here!
What I love about Zeit für Brot is their take-you-by-the-hand, let-me-show-you-everything atmosphere. When you walk in, the warm wood, glass, and metal interior elements meld together invitingly. Cases of sweet rolls and desserts are eagerly waiting to show off their dolled-up ‘dos and reveal their hushed-up secrets; shelves of loaves sit with perfect posture, intently spectating the crowds entering the storefront. Bakers are hard at work, mixing, shaping, filling, decorating doughs, with just a single glass panel separating their flour and your nose.
When there, my brother, Sean, and I tried the following: Ei-Burger (fried egg in a soft brioche bun), Bergkäse-Stulle (veggie sandwich that would’ve been next-level if only it included some form of protein), Weisse Schoko-Himbeer-Schnecke (white chocolate raspberry roll),
Apfel-Zimt-Schnecke (apple cinnamon roll), Walnuss-Ahorn-Schnecke (walnut maple roll), Kardamomknopf (cardamom knot).


Each Schnecke (sweet dessert roll) was made of the same airy yeast dough, the only differences were the fillings and toppings. The white chocolate raspberry Schnecke was surprisingly my favorite–I’m normally not a white chocolate person, but white chocolate in Germany is not just melted sugar, it has character and nuance and it paired wonderfully with the semi-tart raspberries.
Later I learned that Zeit für Brot heavily focuses on sustainability: the Zeit für Brot team produces with green electricity, and with their baking on site, they save on transportation emissions. At the end of the day, any food left over is donated, which is SO cool.
