and so are Copain Bakery & Provision's new summer seasonals!
Summer is scooting in, spring is scooching out.
For many people, that looks like: toasty midday walks, allergy relief, reading by the pool, hosting grill-outs, fresh berries, bottles of sunscreen, s’mores & bonfires, bug bites (😖), refreshing iced drinks, weekend beach trips, tubing, lakehouses, kayaking, a respite from the grind…
…and checking out the sunny seasonal menu items at Copain Bakery 😏 here are a couple of specials I tried (aka most of them 😝)!

PISTACHIO CROISSANT
The bi-colored green stripes are so vibrant, and paired with the muted pistachio green of the filling it felt like St. Patty’s Day threw up all over it 😆 Flavor wise, this reminded me of a spritz cookie, where I tasted more “almond essence sugar cookie” than “pistachio gelato.” Since I prefer a stronger pistachio flavor (bonus points if there are tons of crushed pistachios IN the filling), this wasn’t as good as its Raspberry Croissant cousin from the Spring menu for me, but I wonder if that was because it was a cream cheese base? I heard that they’re planning to swap the current cream cheese filling for one using chantilly cream, which I think will elevate the experience of this croissant 🙌 (rating: 5.5/10)




PINEAPPLE COCONUT ENTREMET
I went into this one expecting a piña colada with equal parts pineapple and coconut, but the ratio is more 90% coconut and 10% pineapple (the dollop of pineapple chunks is the only source of pineapple in here). Depending on how you feel about pineapple, this could be just the dessert for you, or you’ll leave a little disappointed that it wasn’t more pineapple-y. For me, I was a little disappointed, but even though I wished for more pineapple, I was able to appreciate that the entremet was a great tribute to coconut! (rating: 6.5/10)



LEMON BLUEBERRY TART
This tart is like if a lemon meringue pie had a child with a mixed berry cobbler—a perfect balance of lemony bright tartness and subtle berry sweetness—like you’re drinking an iced refreshment on a hot sunny day! Lemon can be an overwhelming flavor, but the lemon flavor in this tart is mild enough that I think most people would love it. Since I really love lemon, though, I could’ve used a smidge more of its zesty tart personality. That said, I still thought this tart lived up to its name splendidly and is a solid thing to order. (rating: 9/10)



CHOCOLATE PECAN ENTREMET
This was so beautiful and mysterious and intriguing to me! I thought the chocolate bundt shape on top was a shell, but it was actually a soft, mousse-like texture that was laced with a pecan praline filling. Taste wise, I was disappointed that I couldn’t pick out the pecan flavor; the flavor profile was 95% dark chocolate and 5% cornflakes. The cornflake crust was a new one for me (I haven’t seen this as a component of an entremet before): I was expecting a crisp texture but instead was met with a tough chew that made me feel like I was eating stale cornflakes. I think a classic shortbread or graham cracker crust here would’ve worked better for me. (rating: 4.5/10)



RASPBERRY ÉCLAIR
Like a cream puff all packaged nicely! It’s so easy to eat and it doesn’t make too much of a mess. The raspberry flavor was pervasive throughout, which I enjoyed, but the entire éclair felt same-y. I think it would’ve benefited from the incorporation of jam/preserves in the filling or another flavor combination to make it more dynamic. Bonus points are granted for this one, though, because it’s also gluten-free 🤯 (rating: 5.5/10)



TOMATO & MOZZARELLA GALETTE
This was a dream! It felt like a mini cheese pizza, or a caprese sandwich (sans basil). It totally gave #TomatoGirlSummer energy. This is perfectly satiating as a breakfast or light lunch; it isn’t heavy, is perfectly savory, and is deliciously cheesy tomatoey garlicy (the goat cheese is well-balanced and not overwhelming, it brings the perfect amount of tang). The tender house made pie dough was the cherry (tomato 😉) on top of the whole experience! (rating: 9/10)



ROSE LATTE
This is the large (12 oz) which comes with 2 shots of espresso. I had a difficult time tasting the rose flavor in the rose water simple syrup, but the sweetness definitely came through! The flavor profile overall reminded me more of a honey latte than anything else. If you’re not too into floral notes, this is mild enough to be a safe option to try. (rating: 5/10)
